The recipe for Tim's Black Eyed Pea Casserole:
2 pounds of Ground beef
2 cans of black eyed peas washed
2 boxes of Wild and White rice
1 onion chopped up
1 bell pepper chopped up
2 cans of cream of mushroom soup
Dry French onion soup mix(optional)
Cheddar cheese on top
Brown the ground beef, onions, bell peppers and soup.
Mix it together with the cooked rice and Mushrooms, then mix it with the cream of mushroom soup. Put it in greased casserole dishes, top it with cheddar cheese, cover it and cook it at 350 for 40 minutes. makes two 9x12 casserole dishes.
Freezes well. Eat one and save one to cook later.
